(and preferably, baked goods)

Trader Joe’s has a seasonal mix for pecan bars that I’ve been working to replicate by jury rigging a couple of recipes I found online and I think I’ve gotten close. In any case, these are easy and yummy!

gooey, crunchy and chocolatey!


  • 1 cup all purpose flour
  • 2/3 cup packed brown sugar, divided
  • 1 teaspoon salt, divided
  • 1/2 cup butter, softened
  • 2 eggs
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 3/4 cup chopped pecans, divided
  • 1/4 cup chocolate chips (optional, and something I add to the TJ’s mix)

Preheat oven to 350 degrees.

Using a hand-held or stand mixer, combine flour, 1/3 cup brown sugar and 1/2 teaspoon salt. Mix in butter. Press this dough into an ungreased 9×9 inch baking pan. Prick dough with a fork and then bake until golden, about 20 minutes. Don’t overbake or it will be dry.

While this is baking, whisk eggs in a medium bowl. Mix in remaining 1/3 cup brown sugar, 1/2 teaspoon salt, as well as the syrup and vanilla, until well combined. Stir in 1/2 cup pecans.

Remove the baked crust from oven and sprinkle chocolate chips evenly over the hot surface. Let them melt for a few minutes and then pour liquid mixture to cover the crust evenly. Sprinkle remaining 1/4 cup pecans on top and then bake until set, about 15 minutes.

Cool completely and then cut into squares.

They don’t last long. Someone stole a couple before I could snap a photo!
